| Özet |
| In this study, samples were taken both evening and morning from stalls where the same fish were on display. Three kinds of fish stalls were used. One of these was made of marble (Group A) and others were made of stainless steel which one of them has two water outlet at lower corner (Group B) and another one has seperate water outlet at each plate (Group C). The changes of group's total mesophile aerobic bacteria (TMAB), total mould and yeast (TM-Y), Coliform bacteria, Eshericia coli., Staphylacoccus aureus and also the relationships of these with kind of stall were examined. Considering the results of analysis committed in the morning E. coli and S. aureus were not determined at any stall. Coliform were not found at group A and C.
